Les Cressonnières are historic watercress beds dating back to the 14th century, located at the source of the Veules River – officially the shortest river in France at just 1,149 meters. Fed by crystal-clear spring water at a constant temperature, these traditional beds have produced prized watercress known for its peppery flavor and fine leaves for over 700 years. Today, three active watercress farms continue this centuries-old tradition, producing about 4.3 tons annually. The site serves as the starting point for a scenic 3-kilometer walking circuit that follows the Veules River to the sea, passing by charming Norman thatched cottages, historic watermills, and picturesque gardens. Visitors can purchase fresh watercress, watercress soup, and watercress butter directly from the farm on Sunday afternoons (mid-August to late May). The peaceful atmosphere and photogenic setting make this an essential stop when exploring Veules-les-Roses, one of France's most beautiful villages.
Interesting Facts
The name "Veules" comes from the Old English word "wella/wiella" meaning source or fountain, first recorded as "Wellas" in 1025. This reveals the Viking influence in Normandy, as the term was also shaped by Old Norse "vella" with a similar meaning – a linguistic reminder of the region's Norse heritage.
In their heyday, 11 watermills operated along the tiny 1.1km Veules River – roughly one mill every 100 meters! They milled wheat, pressed colza seeds for oil, and processed linen for local weavers. Today, only four historic mills survive, including the Moulin des Cressonnières built in 1832, whose owner's initials "F.V." and construction date are still visible on its southeast gable.
Watercress is paradoxically a "winter salad" – harvested exclusively from October to March, with absolutely no production during summer (June to mid-August). The growing cycle begins with sowing or cuttings in late July, making it one of the rare vegetables that actually thrives in cold weather while most gardens lie dormant.
